Cinnamon Apple Muffins with On Guard and Citrus Oil

Cinnamon & apples pair perfectly with On Guard and Citrus Bliss or Wild Orange to make these little beauties perfect tasty treats to boost your immune systems and fill you with joy!! These muffins are melt-in-your-mouth and studded with fresh apples. They boast a sugar cinnamon crumble, that once baked, become crisp and flavourful.

 

My sons loved them, and they made an excellent lunchbox addition.

Apple cake

  • 210 grams (1 and 1/2 cups) plain flour

  • 2 teaspoons baking powder

  • 1/2 teaspoon baking soda

  • 150 grams (3/4 cup) caster sugar

  • 1 cup (approximately 1 large) apple (Fuji, Pink Lady, Granny Smith), peeled and roughly chopped

  • 1 cup of water (to soak the apples) and 2-3 drops of doTERRA On Guard

  • 2 large eggs

  • 1 teaspoon vanilla extract

  • 120 ml (1/2 cup) vegetable oil

  • 120 ml (1/2 cup) Greek yogurt

  • 2 drops of doTERRA Citrus Bliss or Wild Orange

Cinnamon topping

  • 50 grams (1/4 cup) caster sugar

  • 1 teaspoon ground cinnamon

  • 1 tablespoon unsalted butter, melted

DIRECTIONS

  1. Preheat oven to 180 C (350 F) standard / 160 C (320 F) fan-forced. Grease a 12 hole muffin tin and add muffin papers.

  2. Add the chopped apple pieces to a bowl and cover with water, add 2-3 drops of On Guard and stir. Leave to soak for 10-15 minutes.

  3. In a large mixing bowl, add flour, baking powder, baking soda and sugar. Drain the chopped apple and add it to the flour mixture and stir briefly to combine.

  4. In a separate bowl, add eggs, vanilla, oil, yoghurt and Citrus Bliss or Wild Orange. Whisk briefly just to break up the egg yolks.

  5. Add wet ingredients to dry ingredients and gently mix with a wooden spoon until combined – but be careful not to over mix. Spoon batter into prepared tins.

  6. To make cinnamon topping, combine cinnamon, sugar and butter. Mix together until lumpy and wet. Sprinkle over muffin batter.

  7. Bake muffins for approximately 12-15 minutes or until a skewer inserted into the middle of one comes out clean. Transfer to a wire rack to cool completely.
