Lemon Bliss Balls

These little zingy treats are a hit with everyone! They are quick and easy to make and super healthy too. A few drops of pure, food grade Lemon Essential Oil is what makes all the difference ūüėä

Lemon & Coconut Bliss Balls

PREP TIME: 20 mins SETTING TIME: 30 mins TOTAL TIME: 50 mins

INGREDIENTS

  • 1 cup of Almond Meal
  • 1¬†cup of Desiccated Coconut
  • 1 teaspoon¬†Organic Coconut Oil (the one used for cooking, not Fractionated)
  • 10¬†drops doTERRA¬†Lemon Oil
  • 2-3 Tbs Honey
  • Juice of 1/2 to 1 Lemon (add to taste, more will make the balls tangier)
  • Zest of 1 Lemon, finely grated/zested
  • Extra desiccated coconut to roll (optional)

 

DIRECTIONS

  1. Add the almond meal, desiccated coconut and lemon zest to a bowl and mix well.
  2. Melt the coconut oil and honey together in a pot for a few minutes to make them easier to combine. Once melted and runny, add the lemon juice.
  3. Pour over the dry ingredients, add the Lemon Essential Oil and mix until completely combined. Taste and add more lemon juice or honey to taste.
  4. Leave to cool and set slightly, then roll into balls.
  5. Sprinkle the remaining desiccated coconut onto a shallow dish and roll the balls in it to coat.
  6. Set aside in the fridge to set for 20-30 mins.
  7. ENJOY!

 

This are perfect little vessels to experiment with - add some orange and lime juice and oils for a different flavor, or a drop of ginger with the lemon for an even bigger zing!
